Mashed Sweet Potatoes

INGREDIENTS:

  • 4 medium sweet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • Salt, to taste
  • Freshly ground black pepper, to taste

Optional: additional toppings such as brown sugar, cinnamon, or chopped nuts

STEP-BY-STEP INSTRUCTIONS:

  1. Preheat oven to 375°F (190°C).
  2. Wash the sweet potatoes and pierce each several times with a fork.
  3. Bake for 45 minutes to an hour, or until the sweet potatoes are tender when pierced with a fork.
  4. Remove from the oven and let cool for 5 minutes.
  5. Peel the sweet potatoes and place them in a large bowl.
  6. Mash the sweet potatoes with a potato masher or fork.
  7. Add the butter, heavy cream, salt, and pepper, and continue to mash until the mixture is smooth.
  8. Serve hot, with additional toppings if desired.
