INGREDIENTS:

  • 4 large bell peppers, any color
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese

STEP-BY-STEP INSTRUCTIONS:

  1. Preheat oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  4. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in the cooked rice, diced tomatoes, basil, oregano, salt, and pepper. Cook for 2-3 minutes, or until heated through.
  6. Fill each bell pepper with the meat and rice mixture.
