  • 4 center-cut pork chops (1 1/2 to 2 inches thick)
  • 2 cups buttermilk
  • 2 tablespoons hot sauce
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups all-purpose flour
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Vegetable oil, for frying


  1. In a large bowl, mix together buttermilk, hot sauce, salt, and pepper. Add the pork chops and turn to coat. Cover and refrigerate for at least 2 hours or overnight.
  2. In a shallow dish, mix together flour, paprika, cayenne pepper, garlic powder, and onion powder.
  3. Remove the pork chops from the buttermilk marinade and let any excess drip off. Dredge the chops in the flour mixture, pressing the flour mixture into both sides of the chop.
  4. In a large, heavy skillet, heat about 1 inch of oil over medium-high heat until a thermometer reaches 350°F.
  5. Fry the pork chops until golden brown and crispy, about 3-4 minutes per side. Drain on a paper towel-lined plate.
  6. Serve hot with your favorite sides.
