STEP-BY-STEP INSTRUCTIONS:

  1. Preheat oven to 350°F (180°C). Grease a 9×5 inch (23×13 cm) loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar together until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in lemon zest, lemon juice, and vanilla extract.
