INGREDIENTS:

  • 2 cups of sliced yellow squash
  • 2 cups of sliced zucchini
  • 1/2 cup of chopped onions
  • 1/4 cup of butter
  • 1/4 cup of all-purpose flour
  • 1/2 cup of milk
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder
  • 1/2 cup of grated cheddar cheese
  • 1/4 cup of cracker crumbs
  • 2 tablespoons of butter, melted

STEP-BY-STEP INSTRUCTIONS:

  1. Preheat the oven to 350°F (175°C). Grease a 2-quart casserole dish with butter or cooking spray.
  2. In a skillet, sauté the squash, zucchini and onion in 1/4 cup of butter over medium heat for about 5 minutes or until tender.
  3. In a separate saucepan, melt 1/4 cup of butter over medium heat. Stir in flour, salt, pepper and garlic powder until smooth. Gradually add milk, stirring constantly, until mixture thickens.
  4. Stir in the cheese until melted.
  5. Add the cheese sauce to the skillet with the vegetables and stir until well combined.
  6. Transfer the mixture to the prepared casserole dish.
  7. In a small bowl, mix together the cracker crumbs and melted butter, and sprinkle over the top of the casserole.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.

SERVING SUGGESTIONS:

  • Serve as a side dish with grilled chicken or pork
