  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 1 cup golden raisins
  • 1/2 cup slivered almonds, toasted
  • 1/4 cup chopped fresh cilantro
  • Salt, to taste


  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, and cook until softened, about 5 minutes.
  3. Add the ginger, cumin, cinnamon, and black pepper, and cook for an additional 1-2 minutes.
  4. Add the chicken broth, tomatoes, and raisins, and bring to a simmer.
  5. Add the chicken breasts to the skillet, and spoon the sauce over the top.
  6. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the chicken is cooked through.
  7. Remove the chicken from the skillet, and place it on a platter.
  8. Stir the toasted almonds and cilantro into the sauce.
  9. Taste and adjust seasoning with salt if needed.
  10. Serve the chicken with the sauce spooned over the top.
